Sweet Potato Fries With Creamy Mushroom Gravy

Ingredients


For the Sweet Potato Fries

3 medium sweet potatoes

3 tablespoons olive oil

¾ teaspoon kosher salt

½ teaspoon fresh ground black pepper

More salt for sprinkling over baked fries (we like flaky sea salt)


For the Creamy Mushroom Gravy

3 tablespoons coconut oil,

3 tablespoons all-purpose flour

2 cups sliced cremini mushrooms,

2 cloves garlic, chopped,

3 cups LACTAID® Reduced Fat 2% Lactose-Free Milk,

1 teaspoon salt,

1 teaspoon black pepper

For the Assembly

Fresh parsley

LACTAID® cheese curds (optional)*

Directions


For the Sweet Potato Fries

  1. Preheat oven to 450 degrees F.

  2. Line two baking sheets with aluminium foil or parchment paper then place pans in the oven to warm.

  3. Scrub then cut the sweet potatoes into ½-inch sticks. Add to a sheet tray and toss with olive oil, salt and pepper.

  4. Bake for 30 to 40 minutes, flipping halfway through.


For the Creamy Mushroom Gravy

  1. Melt coconut oil over medium heat until melted.

  2. Whisk in flour and cook for 3 minutes, whisking until flour is absorbed.

  3. Add mushrooms and garlic and sauté for 5 minutes until the mushrooms begin to soften.

  4. Add LACTAID® Reduced Fat 2% Lactose-Free Milk and whisk constantly until the mixture is thick and smooth, about 10 minutes. Add salt and black pepper.

For the Assembly

  1. Pour gravy over the fries.

  2. Garnish with fresh parsley and LACTAID® cheese curds (optional).

Notes

*Add LACTAID® cheese curds to make more like poutine: Take 1 cup of LACTAID® Cottage Cheese and add to a nut milk bag or cheesecloth. Squeeze the excess water out and add to gravy-covered fries.
